Bean Casserole and Cheese Strudel

Its raining cats and dogs in Seattle and the weather is perfect to just sit at home, watch the rain and sip a cup of hot coffee..but sadly, one cannot afford to do that with a fulltime job. I literally drag myself out of bed every morning, drown a cup of coffee for me to even get my directions right, somehow get ready and go to work..:( 3.00 to 4.00 is generally the time when my brain just shuts down..yesterday it went on for a little longer...i generally try to write down my shopping list or decide what to make for dinner during this time... the weather was perfect for a bowl of soup but was not in the mood for soup..so I was loooking for something to make with soup and something that will be nice to have very hot.. i was browsing and stumbled on Campbell Soup's site and saw these two recipes there which i thought will be perfect for my dinner...immediately checked mentally whether I had everything I wanted for my dinner and printed out the recipes.

Vegetable Cheese Strudel (source)

1 sheet frozen puff pastry ( thawed for 20-30 mins)
1 tbsp olive oil
1 red bell pepper, cubed
1 cup cubed eggplant
1 small onion, diced
1/2 tsp garlic salt (original recipe called for garlic powder, but did not have any of that)
1/4 tsp dried basil
1/4 tsp italian seasoing
1/2 cup, shredded mozarella cheese
1 egg
1 tbsp water


Preheat the oven to 400F. Heat the oil in a skillet and stir fry the vegetables with garlic salt, basil and italian seasoning, till they are tender. Keep aside and let it cool. Meanwhile, roll out the pastry sheet on a floured surface and spoon the veggie mix onto one of the short sides. Top with the cheese and roll up like a jelly roll. Tuck the sides in. Make the egg wash with the egg and water and brush on top of the roll. Place it on a sheet with the seam side down. Bake for about 25-30 minutes. Slice and serve.




Bean Casserole

1 can Campbell's condensed mushroom soup
1 can cut green beans
1 can lima beans
1/2 cup brocolli florets
1 cup milk
1 cup french fried onions
fresh ground black pepper


Mix in all the ingredients in a 2 qt casserole . Bake at 350F for 25 mins. Top with more fried onions and pepper before serving.

the cheese streudel looks delicious! and I would gladly take the bean casserole, but without the broccoli:)D
